The Plum Sour

INGREDIENTS

COCKTAIL:

  • 1.5 ounces gin

  • 1 ounce lemon juice

  • ½ ounce plum simple syrup

  • 1 egg white

PLUM SIMPLE SYRUP:

  • 1 cup sugar

  • 1 cup water

  • 3 pitted plums (we like Green Gage or Queen Rosa)

 

INSTRUCTIONS

PLUM SIMPLE SYRUP:

  1. Combine sugar, water, and plums in a small saucepan. Bring to a boil, and then simmer until sugar is dissolved. Taste occasionally to ensure sufficient flavor emulsion.

  2. Let cool, and store in a cool place.

COCKTAIL:

  1. Combine all ingredients in a cocktail shaker with ice. Shake hard to chill and combine. Strain out ice and shake hard again. Fine strain into a coupe glass.

  2. Garnish and enjoy!
